It is important to prevent dirt from being grounded into the stone, so sweep on a regular basis and you should avoid that.
Washing your stone floor regularly maybe once to twice a week should be sufficient in keeping these floors clean. You can use natural soaps like vegetable based soaps. These are the best or if you can find a specialty soap that is made especially for stone floors would be ideal. Try to stay away from detergents they leave the floor feeling very dry and raw.
Stay away from any products with acid or abrasives these will surely hurt your flooring. Bleach is actually ok to use, it is harmless and non hazardous. Bleach acts as an oxygen agent. Bleach is great for stain removal but the best choice for a regular cleaning is soap specially made for stone floors and vegetable soap. Make sure you clean the floor very well before you use any soap. If you want to double check the floor after you sweep it, feel free to vacuum to get any particles the broom may have missed.
